The present study aimed to optimize the hydrolysis conditions of SSW by using a RSM-BBD to optimize α-amylase inhibitory activity. Moreover the antioxidant activities on scavenging DPPH free radicals with reduce iron (III) and inhibiting lipid peroxidation were studied along with the molecular weight distribution and amino acid profiles of SSWH.
